On Wednesday, December 18th, Javier Olleros, a chef awarded two Michelin stars and recognized as one of the great masters of Galician gastronomy, will be the protagonist of a new edition of “Encounters with…”, to be held at the FEUGA building in Santiago de Compostela.
This event, conceived as an experience dedicated to creativity and innovation, will offer attendees the opportunity to delve into the universe of a chef who has reinterpreted Galician cuisine from a contemporary perspective, committed to the region and sustainability.
For approximately one hour, Javier Olleros will showcase how he develops his creative process, from selecting ingredients to transforming them into emblematic menus. These creations have made his restaurant, Culler de Pau, a true interpreter of the region, with dishes that awaken the senses and connect with emotions. Among them are standout offerings like Descuberta, Marexada, and Ronsel, menus rich in nuances that leave a lasting impression on diners.
